Really Garlicky Recipes

Chicken Satay Sticks

If any of the ingredients listed in the recipe are available to buy online they are listed at the bottom of the page

2 shallots, skinned
2 cloves really garlicky garlic, peeled
½ tsp ground coriander
½ tsp ground cumin
¼ tsp turmeric
1tbsp fish sauce
3 tbsp peanut butter ( smooth or crunchy)
2 large or 4 small chicken breasts, skin removed and cut into small chunks

Cut a handful of wooden skewers in half with a pair of scissors and soak the sticks in hot water for 20 minutes

To make the marinade; put all the above ingredients, except the chicken in to a food processor and whiz until combined. Add 2 tbsp boiling water and give it another whiz until smooth. Stir the marinade into the chicken and leave for at least 15 minutes, longer if you have time.

Thread the skewers with 2 or 3 pieces of chicken. Preheat a moderate grill. Grill for about 6 minutes on each side, brushing with extra marinade until cooked.
