Stilton & Carmelised Onion Rarebit

Makes 24

1 Jar Really Garlicky Caramelised Onions
300g Stilton, crumbled
200g Parmesan, grated
2 tbsp crème fraîche
2 eggs, beaten
2 tsp wholegrain mustard

6 slices sourdough bread or German rye Bread

Mix the cheeses, crème fraîche, eggs and mustard with some seasoning, then chill.

Pre-heat the grill.
Cut the bread into large bite sized pieces and put onto a baking tray. Lightly toast the bread on one side under the grill. Spread a teaspoon of Really Garlicky Caramelised Onions on to the un-toasted side of each slice, then pile on the cheese mixture, as much as it will hold. Grill for 3-5 minutes until golden brown and bubbling.
